Paleo Pork Chops with Apples & Onions

Pork Chops with Apples and Onions


Tonight's dinner smells amazing! We made Pork Chops with Apples and Onions... Very simple and definitely Paleo. 


Ingredients:
4 center cut pork chops (you could also use bone-in)
2 small organic yellow onions
3 stems of green onions
3 organic gala apples
3 T grass-fed butter
Salt, pepper, and cinnamon to taste

Cooking Directions:
(I'd recommend using a cast iron skillet for cooking)
Season pork chops with salt, pepper, and cinnamon. Melt two tablespoons of butter in the skillet. Brown the pork chops 5 minutes on each side on medium high heat. Remove the pork chops from the heat. Add another tablespoon of butter to the skillet. Season the apples and onions with a little more cinnamon and sauté for about 4 minutes. Serve over pork chops. Yum!

Meatballs and Spaghetti Squash



Ingredients:
1 medium size spaghetti squash
1 pound grass fed ground beef
1/2 cup fresh spinach finely chopped
3 cloves of fresh garlic finely chopped
1 organic egg
1 tablespoon of fresh oregano
 
Cooking Instructions:
Preheat oven to 350, grease a baking sheet and cut the spaghetti squash in half. Make sure you clean out all the seeds an pulp. Lay it cut side down on the greased baking sheet and set aside. Combine: meat, spinach, garlic, egg, and oregano in a mixing bowl. Mix together with hands and roll into 1 inch balls. Place the meatballs in a casserole dish. Place the meatballs and the spaghetti squash in the oven and bake for 30 minutes.
 
Use a fork to shred the inside out of the spaghetti squash. Mix with the meatballs and cover with the spaghetti sauce of choice. Look for sauce with no sugar added!
